Job Description:

Job Summary: Assist Executive Chef in the direction of meal preparation, production and service of all banquet functions. Assist in the supervision and training of culinary staff to implement recipes and menus consistent with the standards applicable to premier dining and catering facilities. Duties and Responsibilities:Present all food as directed by the standards of the Executive Chef and Banquet Director with regard to quality and eye appeal.Meet with Executive Chef to review scheduled functions, menus and requirements.Work in conjunction with Executive Chef and Banquet Department staff as well as other Italian Center departments to anticipate potential problems and concerns to ensure proper execution of client's needs.Maintain exemplary sanitation and food handling practices.Preparation and production of all food services at The Italian Center.Assist in recipe and menu development.Assist in supervision and training of kitchen personnel.Maintain all food related equipment and supplies.Maintain all food service areas and storage rooms in a neat, sanitary and orderly manner.Prioritize and organize work assignments. Delegate work as necessary.Direct performance of kitchen staff and follow up with corrections where needed.Motivate kitchen staff and maintain a cohesive working team.Any other duties deemed necessary and reasonable as assigned by Executive Chef or Banquet Director. Qualifications Minimum of High School Diploma or GED.Formal education at accredited culinary institution.Minimum three (3) years heavy banquet experience or varied restaurant, hotel or country club experience.Expertise in Italian and regional American cuisine.Possess effective written, verbal communication and time management skills.Ability to follow established procedures, determine priorities and work independently.Ability to recognize and anticipate problems and difficulties pertaining to kitchen operations and meal preparation.Ability to determine proper tools and equipment needed to perform job properly and effectively.
