Unit Description

Sodexo, Corporate Services is looking for a Chef Manager to join our team at Boehringer Ingelheim, a pharmaceutical account located in Ridgefield CT. This account has 3 cafes and catering operations. The Chef Manager will be responsible for the culinary operation for one of the three corporate cafes at the property and will report to the Executive Chef. This location has approximately 650 people in the building with a MV of 955K. We serve breakfast and lunch Monday-Friday. This position is a hands on culinary position managing both back of the house and front of the house employees. Other duties include:

* Daily food production of entrees, theme stations, catering and special function specialty menu items
* Special function and catering planning with customers
* Ordering and inventory responsibilities
* Haccp and production records, to include monthly safety audits
* Employee training to include monthly safety
* Manage staff of 9 on site employees
* Oversees the preparation, food quality, portioning, garnishing, and storage of all food
* Oversee unit financials are maintained accurately, verify daily deposit and safe control, ensure daily deposits brought to bank. (Bookkeeper processes financial input)
* Payroll
* Leadership of staff, employee scheduling and staff hiring decisions
* Employee performance reviews
* Planning of unit promotions and weekly menus
* Maintain on site wellness and sustainability standards
* Interacts with customers and clients

Position Summary

Supervises cooks and oversees the preparation, portioning, garnishing, and storage of food. Estimates food consumption and purchases food. May assist in cooking and preparing food as necessary. Responsible for maintaining kitchen and storage facilities in sanitary condition. Responsible for cash management. Interacts with client/customers on a regular basis. This position is the leader for an account/unit chef/production group. This position is in smaller accounts/units where there is not a Executive Chef or Food Production Manager. Reports to General Manager.

Qualifications & Requirements

Basic Education Requirement - Technical, Trade, or Vocational School Degree

Basic Management Experience - 1 year

Basic Functional Experience - 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
